This was always a favorite at my house growing up. We called it hootnany, but I've also heard it called puffed oven pancakes and German pancakes. Now it is becoming a favorite in the Harris household-- especially on Sunday mornings. Vaughn calls them cupcakes. We just finished some this morning so I thought I'd share the recipe. This is the perfect amount for our family, but you can easily double the recipe in a larger pan.
- 2 Tbs. butter
- 3 eggs
- 1/2 cup flour
- 1/2 cup milk
- 1/4 tsp. salt
Heat the butter in a 9x9-inch pan in a 400 degree oven. While the butter is melting in the oven, mix together the eggs, flour, milk and salt until well beaten. When the butter is melted, pour the liquid mixture into the pan and let bake for about 15 or 20 minutes, until the sides rise over the pan, and they are browned. It's fun for kids to watch the oven while it bakes.
You can top with powdered or brown sugar, syrup, fresh fruit, or jam. We made some strawberry jam with some fresh strawberries for ours this morning. Delish!
